Salad: |
5 cups romaine (torn) |
5 cups red leaf lettuce (torn) |
1 whole red apple (chopped) |
1 whole green apple (chopped) |
1 cup gorgonzola (crumbled) |
1/2 cup walnuts (chopped, toasted) |
1/3 cup red onion (thin sliced) |
1/3 cup dried cherries |
Vinaigrette: |
3/4 cup apple cider |
3 tsbl cider vinegar |
2 tsp honey |
1/4 tsp kosher salt |
1/4 tsp ground pepper |
1/4 cup walnut oil (or canola) |
In a salad bowl, combine the first eight ingredients.
In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Drizzle over salad; toss to coat. Serve immediately.
