1 Large Jar Randall Pinto Beans (rinsed and drained) |
1 Large Jar Randall Northern Beans (rinsed and drained) |
2 - 3 boneless skinless chicken breasts (cooked and shredded) |
2 cloves garlic (minced) |
1 medium onion (chopped) |
1 - 2 habanero peppers (seeded, minced) |
1 large can refried beans |
salt and pepper to taste |
olive oil |
1 - 2 cups chicken broth |
add 1 - 2 tbsp olive oil in a pot over med heat
Cook onion until it begins to soften
Add garlic and habanero peppers, stirring frequently
Once garlic is fragrant, add beans
Stir in cooked chicken
Add 1 of broth along with refried beans, adding second cup as necessary until you reach the desired consistency.
Salt and pepper to taste
